How to Make Guacamole-Stuffed Onion Rings

What happens when you combine homemade guacamole and onion rings? Heaven for your taste buds. These crispy snacks are a must — check out the recipe below — they’re fun and easy to make. You’re welcome.

Once you’ve been blessed with this heavenly idea, make sure you have all of your ingredients to get cookin’. You’ll need three ripe avocados, one lime, one diced tomato, 1/4 cup of chopped cilantro, and two minced cloves of garlic. In a medium-sized mixing bowl, mash the avocados with the juice of your lime. Next, mix in your chopped tomato, cilantro, and garlic, and add a pinch of salt and chili powder for a bit of a kick. This will be your delightfully delicious guacamole.

For your onion rings you’ll need two small-medium onions, two eggs, 1 tsp salt, 1/2 tsp chili powder, two beaten eggs, two cups of breadcrumbs, and oil for frying.

Next, cut your onions into about 1/2-inch slices, and separate the layers into individual rings. Place them on a tray lined with wax paper (tin foil works, too) and fill each with guacamole. Then, place the tray in the freezer for one hour.

When it’s just about time to remove the guacamole rings from the freezer, place your flour, eggs, and breadcrumbs into three separate bowls. Remove the rings from the freezer and roll each in the flour first, then in the eggs, then dunk them in the breadcrumbs. Coat them each once more in the eggs and then finally into the breadcrumbs.

In a large sauce pan, heat oil to 350ºF and fry your guacamole onion rings in batches until they’re browned on all sides. When they’re done, place them on a paper-towel-covered plate to absorb excess oil. Sprinkle them with salt and lime juice, serve with sour cream, and introduce your taste buds to a dream they didn’t know was possible.
